Toffee Cookies

Before you proceed, these are not what you think they are… or maybe they are? They’re quick and unpretentious, and I remember that Adam and I loved them.

About 24 square club crackers or graham crackers

1/2 cup brown sugar

1/2 cup butter

1/2 cup chopped nuts (pecans)

1/2 teaspoon vanilla

In a sauce pan, heat butter, add sugar and let boil for one minute (stirring constantly). Remove from heat and stir in vanilla. Put crackers in a jelly roll pan (I have no clue what that is so just find a pan that will fit the crackers) and pour mixture evenly over them. Sprinkle with pecans. Bake at 350 degrees for 8-10 minutes. Let cool slightly and cut into bars while still soft.
