Potato Leek Soup
Leeks sliced and make sure to cut of the green parts (didn’t say how many so just go with 2-3)
2 tablespoons butter
2 cups water
2 cups chicken broth
2 pounds or 4-6 potatoes diced (I think she used yukon gold or red)
1 tablespoon parsley
1/2 teaspoon thyme
Saute leeks in butter for about 10 minutes but do not brown. Add the rest of the ingredients and simmer for 20 minutes or until potatoes are done. Puree half of it.
